The vineyards are well exposed, the soil is clayey and calcareous.
The grapes, hand harvested in September-October, undergo a controlled process to preserve the typical varietal characteristics. The wine is fermented in stainless steel tanks at controlled temperature for about two weeks, in order to obtain the optimal extraction of the fruit and soft tannins. Part of the grapes of our Sangiovese are placed in boxes and undergo a process of withering.
Sangiovese is one of the most widespread Italian grape varieties. Its origins date back to the 16th century and it is known as “Sangue di Giove” (Jupiter’s blood). Many great wines such as Chianti, Brunello, Montefalco and Morellino have the Sangiovese in their blends. Our Sangiovese Rubicone Decó is particularly important for its intense red colour and for its complex and deep bouquet.
